During the week that begins with Cinco de Mayo, Crema Restaurante will be offering a unique week long menu that will merge Mexican and French ingredients. A sort of “peace offering” to the French, Chef Julieta Ballesteros, from Monterrey, Mexico will create several items on her menu that draw upon her training at New York's French Culinary Institute.

Between 1864 and 1867, Mexico was ruled by the former Austrian archduke Ferdinand Maximilian, who was kept in power by French troops. Though Maximilian's reign was brief and tragic, French cooking left its mark on many Mexican-restaurant dishes.

Some of the dishes that Chef Julieta Ballesteros has reinterpreted with French ingredients are as follows.

• Queso Flameado, which usually calls for Chihuahua cheese, gets nutty gruyere as its new base.
• Her famous duck enchilada suiza has been paired off with foie gras as its partner.
• Pomme Frites get a musty zing with huitlacoche aioli
We will also feature complimentary tequila pairings by Milagro Tequilas.
The pairings of all three lines of Milagros - Blanco, Reposado, and the Anejo will accompany the French influenced menu. Some of the tequilas will be infused with such classic French flavors as lavender, pear and cassis.
