Irvine Institute for Environmental Education FOOD AND THE ENVIRONMENT HOW WHAT WE EAT IMPACTS OUR BODIES AND THE WORLD, 3 SESSIONS. This course will examine the food we eat, and how it impacts the environment. It will look at how people and food are connected via stereotypes, memory, society and eco-justice. There will be discussions on organic food, Community Supported Agriculture (CSA), economic disparities, American obesity, and world hunger. The Saturday class will include a trip to a local eco-friendly farm. Instructor: Jennie Walker, Adjunct Lecturer McDaniel College.
