Pardon, there's no mistake. I got it directly from a New Orleans website. This is also how I've heard & seen it all my life. I was born & raised in NewOrleans. (http://www.nola.com/wwoz/index.ssf/2008/06/laissez_les_bon_temps_rouler.html)
From what I have seen after your message is it can also be "roulet", so I guess we're both right.

We're fixing Jambalaya, Red Beans & Rice, Gumbo, & Maque Choux (it's a corn dish). We'll also have King Cake, & hopefully Beignets by request. We'll also have Cafe Au'Lait by request. Instead of charging at the door, I think it would work better for folks to just come in & order what they want from a menu board/poster by the kitchen counter, like some places in New Orleans. I think that would lend to the atmosphere & folks could get just what they wanted instead.
